Ingredients

To Pre-Cook
 800 g Pork (Wash and clean and cut into medium size pieces)
 1 medium onion – chopped
 ½ inch ginger – thinly sliced
 4 garlic pods – chopped
 1 Red Chili – sliced
 4 Curry Leaves
 1 tbsp Vinegar
 1 tsp Chilli powder
 1 tsp Turmeric powder
 1 tbsp Coriander powder
 Salt to taste
 2 medium Raw banana – Chopped to medium cubes (Wash and clean before cutting and cook it with little turmeric powder and salt in a pressure cooker with little water till one whistle and keep aside)
For the Spicy Masala
 Coconut oil/Vegetable oil (coconut oil is preferred)
 2 medium Onions- chopped
 ½ inch ginger – thinly sliced
 4 garlic pods – chopped
 1 Red Chili – sliced
 few Curry leaves
 1 tsp Black pepper powder
 1 tsp Garam masala powder
 Salt to taste
Directions in a nutshell
 Pressure cook the pork with the mentioned ingredients on high heat till one whistle. Then cook on low flame for around 3-4 minutes and switch off. (if the pork needs to be cooked more, pressure cook for another few minutes)
 Heat oil in a pan, add the onions and sauté for two minutes and then add the ginger, garlic, red chilli and curry leaves. Fry for few minutes and then add the garam masala and black pepper powder and fry for 2-3 mins.
 Now add the pork and mix well. Finally add the cooked banana to this and mix well. Take it off the heat.
 Garnish with coriander leaves and onion rings. Serve hot with chapati or Kerala porotta.

I have used boneless cubes of pork here, however this recipe is tastier when the meat is with bones and has more fat.

An interesting ingredient in this recipe is raw banana. Also peeled, cubed and pressure cooked with a little salt and turmeric until soft…. Ensure that it does not overcook and get mushy.

Once the pork and the banana are cooked, get started on the spicy mixture. Sauté some more onions, ginger, garlic, red chlli and curry leaves in coconut or vegetable oil.

Once soft, add garam masala ad black pepper powder. Fry for a few minutes. Add the cooked pork and mix well.. let it fry for 2 – 3 minutes. Finally add the raw bananas. And mix well. It doesn’t need to be cooked for a long time, as pork and the banana are pre-cooked.
