Rarely do I cook just for myself… Since I have a husband and a kid, I have to think about their tastes and take their likes and dislikes into consideration… But as I was in the mood to cook a camel on Thursday, and I was really missing my mom for some reaso, I made a teeny bit of Gajar ka Halwa. I love this typical North Indian dessert made primarily with carrots and milk. As it is not much liked by my family here (strange!), I haven’t made it in a long time… Mostly, I just satisfy my craving for it, by either looking for restaurants that serve good gajar halwa (very rare) or praying everytime we go to some friend’s house for dinner that they will serve it for dessert.
Luckily it turned out as good as ever. Only wished I could have shared it with my Mom.
The carrots in India used to be very red and the end result used to be a rich red colored Halwa. I’ve never seen those red carrots here in the UAE. So, grate the orange carrots!
Honestly, this is one of the easiest, yummiest desserts of all time… All you need is some milk and carrots…. Pour them together and let it simmer. I know that some people like to add condensed milk or khoya (dry form of condensed milk). It can reduce cooking time and make the dessert richer.
Well, you also need some sugar and pure ghee and cardamom, to add some flavor…
But most of all you need patience as it simmers there in front of you, until the milk condenses and is combined with the carrots.
